Nusa Dua, Bali, May 2014… The Westin Resort Nusa Dua, Bali takes great pleasure to welcome Italian Chef de Cuisine, Alessandro Molini (Alex), to its culinary team. He comes direct from Four Seasons Resort Nevis in the West Indies where he was instrumental in re-establishing their Italian restaurant following a tropical cyclone.
Passionate about food from an early age, Chef Alex graduated from school with a culinary certificate from Domodossola near his home town of Montecrestese, Italy. After embarking on his chosen career he later completed his education with a college degree in general hospitality studies. Chef Alex enjoyed a rapid rise through the culinary ranks during his time at Bulgari Hotel Milan, a luxury property renowned for its exclusive sense of style. He then accepted a succession of roles that took him to cook in exotic destinations such as Tanzania and Greece.
Upon returning home to Italy, Chef Alex was contracted to work as an instructor for the Formont Culinary High School in Villadossola. There he created a curriculum based on kitchen techniques for baking and pizza making. His main role was to train students with disabilities and behavioral problems for job placement within mainstream society.
Now Chef Alex finds himself on the island of Bali where he is responsible for Prego, a Westin concept restaurant that puts the fun back into Italian dining. This family-friendly venue satisfies appetites with its generous portions of classic pasta dishes, regional specialties and delicious pizzas that represent real value for money.
Since his arrival, Chef Alex has been quick to familiarize himself with the availability of local ingredients and has already put his traditional bread making skills to the test. He has also overseen the introduction of an outdoor barbecue to enhance the extensive array of delicacies served at Sunday’s Prego Family Brunch.
In his spare time Chef Alex is an enthusiastic golfer with a love for travel and motorbikes. His outgoing personality makes him ideal to lead the team at Prego. He is looking forward to immersing himself into Bali’s vibrant dining scene and experiencing the island’s rich cultural heritage.
